Introduction	Having had an interest in food, farming and nature since a young age, I left school at 16 to train in culinary arts. During that time I worked in restaurant kitchens, and also became a cheese monger at Paxton and Whitfield. I then when on to study cheese making at the School of Artisan Food for a year. I am now embarking on a project to build and set up my own artisan dairy in south Warwickshire, where I will be producing an alpine-style cheese, inspired by the Fromagers of the Savoie and Franche-Comte, using unpasteurised milk from a single herd of cows. This blog follows my journey with varied food experiences, accounts of visits to artisan food producers, and recipes. Enjoy. With some decent wine.
