Introduction Danish traditions and recipe-trends historical and current by a dedicated ex-pat. Both my grandmothers have left me copies of their personal hand written cook books. I also have a book recalling another family member from long ago's childhood memories. Both of my grandmothers ran large households with a varying number of employees to feed (during harvest it could be 40), two menus were to be had on any given day, one for the upstairs and one for the downstairs, very much like the English sit-com by the same name. It was a different age and a different time and I think todays households can learn much from the frugality and notion of nothing left unused of the time. Some of the recipes in my grandmothers' cookbooks deal with how they had to manage during the war and I find the inventiveness and creativity inspiring. But before we get to that, this blog will describe Danish traditions and folklore in English to establish the background and foundation to these lives and stories.
