Introduction I am a chocolate maker at a Toronto-based artisnal chocolate factory. Former pastry chef for a well-known Canadian chef. Cooking became my career a few years ago after spending a number of years working in marketing on Bay Street.

Food seems to take up a good amount of my personal, as well as professional, time. When I am not at work, I am reading cookbooks and restaurant reviews, preserving fresh Ontario produce, cooking, baking and ultimately, eating.

My culinary philosophy is to eat locally and seasonally. But because I live in a temperate climate, I make provisions to enjoy seasonal produce all year round by canning, freezing and preserving what I can while it is in season.
