IntroductionMy life changed for the better in 2006 when my cholesterol and LDL's surprisingly soared. Then, I thought I was trim, healthy and active. After that epiphany I embraced a whole foods, plant based lifestyle. The result? Lipids plummeted, arthritis melted away, and I danced a happy dance! In 2008 I was accepted and became certified as a Food for Life Instructor for Physicians Committee for Responsible Medicine (PCRM), founded by Dr. Neal Barnard. A year later I became Certified by Cornell University and the T. Colin Campbell Foundation in Plant Based Nutrition as a Plant Based Educator/Consultant.Also, am certified as a CHIP instructor (Complete Health Improvement Program). In addition to teaching for PCRM, I offer private cooking classes and consultations on the how, what and why of plant based eating. What keeps me going are the many folks who've reversed chronic conditions by choosing to put on their forks the foods known to heal - fruits, veggies, legumes and grains. Giving up animal protein and dairy has been a blessing and godsend, not only for me, but more and more cows are doing their happy dance, too!

Favorite booksThere are so many; it's hard to enumerate. But a pivotal reading was "The China Study" by Professor T. Colin Campbell. Another favorite has been "Healthy Eating, Healthy World" by Jim Morris Hicks. Have to include the many biographies I've read on Isak Dinesen. Also, have read all the works of Henri Nouwen. Also love "Man's Search for Meaning"!
