Introduction	I started cooking when I was 8. I have spent the majority of my life in and around the restaurant business. I lived in New Orleans until Hurricane Katrina. I have found that food items that were common in New Orleans would be difficult to find in Arkansas, especially fresh seafood. I have adapted my recipes to use ingredients that are easily found here in Arkansas. I hope you enjoy them as much as my wife and I do.
