| Introduction | Gluten-free tapioca pancakes made from tapioca flour and cooked to perfection, crunchy on the outside and chewy on the inside – they are unlike anything you have ever tasted. Tapioca flour is derived from a root vegetable native to the north of Brasil called cassava. Cassava was a staple food of the Brazilian natives. Nowadays tapioca pancakes are a popular “street” snack all over Brazil. Cooked without oil, gluten-free tapioca pancakes are healthy and filling. It is an exotic snack filled with local fresh ingredient straight from the farmer’s markets that we take part in. The pancake dough has only one ingredient – tapioca starch. Due to its unique properties, tapioca can be cooked without any extra additives. Our pancakes are then filled with fresh seasonal fillings. We do our best to purchase our ingredients from the local farmers and we focus on what is in season. Normally, we will have a meat option, a vegan option, a vegetarian option and a sweet option.
