About me

Introduction I was diagnosed with Celiac Disease, casein intolerance and multiple food allergies about 4 or so years ago. I immediately went gluten and casein free. I never knew such energy existed! Then slowly, I allowed the foods that were poisoning me to creep back in my lfe and diet. I never really tried GF/CF baking as I simply felt it wasn't worth it. You see, I'm a foodie. A food purist... food snob if you will. So anything that doesn't taste exactly like the real thing.. bah, I don't want it. So why am I re-embarking on this journey now, you ask? Because I have become sick & tired of being sick and tired. I'm tired of being unable to lose weight. I'm tired of needing a nap after taking a shower. I'm tired of feeling like I'm being stabbbed in the gut after I eat and everything else that goes along with this disease. (If you're not intimately familiar with those things, I'll spare you some details. It's not pretty.) So now here I am, embarking on a new culinary adventure, determined to make the yummiest food. Food even a non GF person will love. Here's to cake!
