| Introduction | Like so many others I started working and going to college straight out of high school; and like so many got lost and drifted out of school because a job became a career. For nearly twenty years I worked in the culinary arts. One day I woke up with pain in my lungs and unable to breath. It turns out at the tender age of 27, and a trim 165 lbs, I had developed congestive heart failure. My illness coupled with disregard for myself, laziness and being oblivious to the changes in my appearance found me 15 years later having doubled my weight. In the process I lost my wife of twenty years and any self-confidence I had once had. One day I was sitting feeling sorry for myself and thought, "You did this to yourself. You're a chef and know food fix yourself. So, that is where I am today. On a journey to fix 15 years of bad living and bad choices. I hope my journey will be able to help you on yours.
