| Introduction | I grew up in a family of great cooks. None of us had professional training, but all of us knew how to put a healthy, delicious meal on the table to serve our family or to serve a crowd. We cooked farm to table before anyone invented the term. We ate vegetables from the garden grown without pesticides, because pesticides were not readily available and after all, did it make sense to put poison on the plants that were going into our bodies? About 15 years ago, my food life changed. High cholesterol runs in my family, and I had my first high cholesterol test. My doctor suggested I vigilantly remove most red meat and saturated fat from my diet to avoid taking medication. I became a low-fat cook. A delicious, low-fat cook. My cholesterol decreased and has remained within the normal range. Now in my mid-50's, I have a new food challenge: keeping my weight in check by increasing fruits and vegetables and decreasing carbohydrates in my diet. The ultimate goal: healthy food that doesn't scrimp on flavor or presentation or take forever to prepare. After all, who feels like spending hours in the kitchen after a long day’s work? Mission accomplished! |
