Introduction	I have been a Head Chef for the past sixteen years and in that time I have seen many changes in food, the way we look at it, the way we cook it and even the way we eat it. I decided to start writing this blog to give an insite into the way i think about food and the recipes I use. There are stories to be told and statements to be made about how wonderful our local Irish artisan producers are and hopefully I will do them justice writing this blog.
