Way back in 1993, with Prue Leith's manual on how to be a restaurateur and 'Floyd on France' firmly tucked under my arm, Clare (my wife) and I set off for the Lot valley in SW France to run our own restaurant. My time there, as a professional chef, was truly exciting and so rewarding. There is nothing to compare with this line of work if you are looking for direct and immediate acknowledgment of your creative endeavours! This blog is, in major part, a celebration of this life-changing (and, as any successful chef will tell you, exhausting) experience. |
