Introduction	Courtney is a student studying pastry arts at the prestigious Johnson and Wales University. She began baking at a young age when she would help her great grandfather make bread in his kitchen and help her mother make cookies during the holidays. In middle school she also would stay after school to partake in a cake decorating and cooking class. Up until her junior year of high school she didn't realize that she wanted to pursue baking as a career, she just did it for fun. She made her decision to go into this field when she took a Wilton cake decorating class at her local craft store and fell even more in love with baking. Since being at Johnson and Wales University Courtney has learned how to make a variety of items ranging from danish and bread to pies and tarts. During her time at Johnson and Wales she has fell in love with pies and it is now one of her favorite things to make. This is her pies and tarts cook book. :)
