Wood, definitely. Soap is more forgiving, say if you really hate one section of the carving, you can always slap another glob of soap on and have do-overs. But carving with wood doesn't make you feel all slimy. HEY! This is my answer to the "which do you like to carve most, soap or wood?" You'll just have to wonder about my stance on punctuation and big things on the highway.
