Introduction	I like to take a bowl or casserole dish, fill it with a liquid (such as wine or broth) combined with spices (both in solution and suspension) and other flavorful ingredients, and then place more or less absorbent food (usually meat, though mushrooms and tofu benefit from this treatment too) in the bowl to soak for some period of time.
