| Introduction | Hello everyone! I taught Meat Identification and Fabrication class at The Culinary Institute of America, Hyde Park Campus for 27 years. I've since retired. Before teaching, I owned Schneller's Restaurant in Kingston NY, which was attached to my father's butcher shop. I grew up in that business which established my meat knowledge foundation. The goal of this blog is to share my knowledge of meat with the rest of the culinary world and in the process discover new ideas and concepts. I will occasionally add some opinions but the goal is to inform and not influence. Welcome. |
