| Introduction | Visit Madame Cocoa on Facebook and Twitter for recent escapades. My niche is craft bean to bar chocolate. But I don't make it! I teach Chocolate 101 classes at the University of Texas Austin (informal classes) and Chautauqua Institution in NY, along with private events, and host/MC the Dallas Chocolate Conference that is in our 4th year.
