| Introduction | As a boat captain and fishing guide in South Florida, Chez Rey developed a distinctly coastal flair to his cooking. He finds inspiration in the native dishes of the tropics and the Caribbean, and in the memories of his two grandmothers. One was part of an extended Italian family that owned restaurants throughout the Midwest. The other was a "pioneer woman" who raised 14 children on a farm in the Smoky Mountains of East Tennessee. He couples that inspiration with a dedication to showing that cooking from scratch is not only better for people and the planet, but is easier than most people realize. |
