| Introduction | I'm a 911 dispatcher and a Wife and Mom of two! I put myself on a gluten free diet after I was diagnosed with Multiple Sclerosis. I was very worried to begin with because my family are big bread/pasta lovers and I wasn't sure how I was going to do it. I am doing really great, I have been tricked a few times, but I think things are going pretty smoothly. The most important thing to learn is how to shop the perimeter and to pay special attention to labels. Never be afraid to call a company to make sure you are getting items that are gluten free!!
