Introduction Hi, I'm Del (del@flex.com). I bake breads (sourdough, Portuguese sweet breads, flatbreads, baguettes etc.) and LOVE pizzas! All baked in a regular conventional oven. But I want to try baking in a "real" stone (brick) oven, ovens that in one shape or another have been used for thousands of years for cooking and baking. Here in Hawaii, native Hawaiians used a "imu" (underground oven) that was basically heated rocks that when hot enough, were placed in a shallow pit in the ground alongside banana leaf wrapped meats and other food and then completely covered over and mounded with dirt. So I'm making an above ground imu. These are my adventures in building and then cooking and baking in a brick oven in Hawaii.
