Introduction	Hello fellow bloggers & visitors! What do you need to know about me? I'm 31 & I work full time for a law firm as a legal assistant. I finished my undergrad in Psychology in November 2008 and hope to someday soon pursue grad school. I am also one of the 1 in 133 Americans who have been diagnosed with Celiac's Disease. I was diagnosed at the end of 2005 by blood test and again by biopsy in 2007, another biopsy in 2008 with a diagnosis of Refractory Sprue, and a fresh 2009 diagnosis of Microscopic Colitis. Living and coping gluten free, soy free, and mostly dairy free has become a very large part of my life. It has been and continues to be an ongoing journey with both good days & bad. I hope to educate myself and many others along the way!
