| Introduction | I am an elementary school teacher and I love my job. Most days. My family and friends mean the world to me and I don't know where I'd be without them in my life. In 2012, I was diagnosed with Hashimoto's Hypothyroid, which basically means my body doesn't work the way it should. I usually have zero energy, my hair is brittle and falls out like crazy, and I have to watch what I eat because my metabolism works at a snail's pace. I've spent the last year and a half eating gluten free and have encountered some yummy (and not-so-yummy) recipes along the way. |
