| Introduction | I grew up on Tampa Bay fishing for my dinner much of the time. In little league baseball I won the championship by hitting a home run the last pitch of the game, with my eyes closed, literally. That's how I am. I swing in the dark, but almost always hit the target. When I turned 15 I needed a way to fund my new addiction to the guitar, so I started working in restaurants. I learned a lot cooking in kitchens but working a line never seemed to really be my thing. So I endeavored to learn what it was I loved about cooking through home study while working as a contract web designer. I studied cuisine from around the world and perfected my own versions of recipes for my favorite dishes. Being prepared for anything is an ancient art. That's why every day I make something unexpected from random things I pull from my cupboard. I rarely follow recipes, although I use the internet for getting snapshots of other people's recipes before forming my own sort of average ratio as a guideline. After that I just wing it. Swing in the dark. I find that trusting my instincts and intuition pays off in the end tenfold. |
