IntroductionAmy Rota-Poulin is the author of "Cooking Gluten Free With Amy". When Amy's husband Pierre, was diagnosed with an intolerance to gluten, she began her extensive research of food ingredients, Celiac Disease, and other gluten intolerances. Amy learned to cook all of Pierre's favorite dished gluten free, without sacrificing taste or nutrition. Amy earned her Bachelors degree from Johnson & Wales University in Providence, RI. She is a regular guest on the "Let's Eat" cooking segment on WNYT's Morning Today Show, on NBC, in Albany, New York. Amy has been sponsored by a national supermarket chain to share her expertise in live cooking demonstrations at Gluten Free Food Festivals, is a frequent speaker to gluten intolerance groups, the Restaurant Liaison for the Glens Falls Regional Celiac Support Group, and a contributor to The National Foundation For Celiac Awareness Newsletter. As an equestrian and a former dressage champion, Amy enjoys riding her horses and training her three breeds of dogs (Jack Russell Terrier, Labrador Retriever, and Chihuahua), with her husband Pierre, on their farm in upstate New York.
