| Introduction | I am a certifiable smart-pants. I am also a certified food safety manager, recording engineer, and dining room associate. I am currently (finally) at culinary school. I am surrounded almost entirely by children that don't seem to give a shit about food. In a general sort of way, that gives me a woeful feeling about the future. In a specific way, it has given me a sense of security seeing that even though I am an old man by comparison, I am still potentially more valuable and focussed than my young counterparts. I am not a very confrontational person, but censorship has never really been my thing; if I had an interest in sugar coating things, I would be studying confectionery as a baking and pastry major. |
