Doh! (Dough) Diaries

Introduction	I am an attorney living in Alexandria, Virginia, although I originally hail from a suburb of Chicago. I attended law school at Depaul College of Law in Chicago, and for my 27th birthday my parents took me to a bread baking class taught by Peter Reinhart. It changed my life. Dramatic? Perhaps. In that class I learned about the main components of bread (flour, salt, yeast, and water), and about gluten, and about refrigerated fermentation and....well....enough to start doing some severe baking on my own. My friends in Chicago and Austin are rolling their eyes right now - slightly more interested in the end product than how I get there. Since then I have been baking nonstop with the help of a bread machine and friends that eat both my successes and my screw-ups. I have attended an additional class by Peter Reinhart that focused on layered dough (like Danishes and Croissants) and the minimalist art of artisan bread baking.
