| Introduction | Sunshine (yes, it is her real name) is the Proprietor of Your Safe Kitchen Culinary Consultations and Rise and Shine Desserts. She is a leading consultant in the field of Special Diet Culinary and is an expert Special Diet Baker. Sunshine also has professional and academic training in the fields of Sustainable Urban Agriculture and Paralegal studies (Ontario, Canada). Career highlights include professional culinary training, international travel and an 9 year career in Information Technology. Since diagnosis of Celiac Disease in 2003, Sunshine continues to dedicate her time and travels to discovering recipes, researching the histories, uses and benefits of foods and techniques. Since establishing her reputation in the midwest in 2006 - Sunshine has been recognized CBS Chicago, ABC Chicago, Comcast Television 'Community Connections', Mayor Daley's Chicago Works and the Chicago Sun-Times for her leadership in the special diet community. Sunshine is working on a number of side projects. One project is funding a global agricultural knowledge project. She is also working on finding an outlet for a special diet/cooking show! |

| Favorite music | I love Radiohead, LOVE them. Greenwood & Yorke are geniuses. The voice of Lhasa de Sela (r.i.p.) is pure and makes me believe there is a heaven when I hear her sing. Yukimi Nagano's voice always takes me to 'that place' - she's magic. I love K-OS, The Noisettes, Modest Mouse, NIN, Blue October, Maxwell, Alison Hines, LOVE Calypso, Soca, Reggae, Samba...again, too many to list. |
