Introduction Diagnosed with Celiac Disease more than 5 years ago, I enjoy gluten-free baking and creating new gluten-free recipes. I use coconut flour quite often because of its nutritional value and because it is tasty and not gritty. Coconut flour can be tricky because it absorbs so much liquid. A little goes a long way! I also use almond flour in many recipes because of its nutritional value and great taste. Gluten-free doesn't have to mean taste-free. Baking brings me joy and I hope these recipes make you as happy as they make me.
