Introduction	I have had to get creative when it comes to preparing dinner. Four days a week I am out and about with my 10 year old daughter that is in an after school science club, Taekwondo and often basketball. And as usual, all of the programs meet around 5:00pm so this really puts a cramp in cooking. A slow cooker is great but it gets boring over time. To complicate preparing a hot dinner even more, I have to be careful of what I eat but yet make meals flavorful for everyone. I have very aggressive Coronary Artery Disease which means that my body cannot properly regulate the 1000 or so mg of cholesterol that I produce each day much less consuming cholesterol from outside sources. With this aggressive disease, no amount of exercise, drugs or diet will alter the fact that my blood carrying plumbing will get clogged again and again. I can only take measures to perhaps prolong the time frame between blockages. These blockages have caused me to have two strokes, 6 cardiac stents, 1 vascular stent, complete blockage of my right carotid and a Carotid Endarterectomy to my left carotid.
