Introduction	I began working as a chef by accident, filling in when someone left their post at a restaurant in my native Shropshire. It was at this restaurant (The Crown Country Inn, Munslow) that I worked closely with Masterchef of Great Britain, Richard Arnold, who proved to be a great mentor and influence. The emphasis at the two AA rosette restaurant was on great local produce, cooked to do it justice. I then spent a short period at ‘Le Manoir Aux Quat Saison,’ working as part of a large team at Raymond Blanc’s iconic 2 Michelin starred restaurant before gaining valuable experience at Hugh Fearnley-Whittingstalls ‘River Cottage.’
