| Introduction | As a Brit I have to say that the UK has had a chequered recent past regarding good food. We fell into a gastronomic darker ages after WW2 with rationing and little imagination in the 60s and 70s as suburbs sprawled and 'convenience' became the buzzword. My mother was a really good cook but rarely had the time to fashion one of her large Moussakas or beautiful home-made trifles, and my late grandmother - God bless her - came from a time when overcooking was the norm. Until I reached my mid-teens, I thought that carrots and brussel sprouts should have the same molecular construction on the plate as runny mashed potatoes and that rabbit should only ever be fed to a pet! Then I befriended some folks who knew their tarragon from their thyme and could rustle up leeks in cheddar and onion sauce and season a roast in their AGA. And suddenly my whole world changed.... |
