I've never found any difference in the order of adding ingredients, so I doubt that would cause a problem.

That chocolate recipe looks a bit odd because of the milk powder, cornstarch, and corn syrup, all of which are used sort of like stabilizers, even though the chocolate in the recipe should be plenty on its own. The recipe doesn't have eggs, which I would usually add to help with consistency, but maybe they had a reason for excluding them, and they're trying to make up for it by adding other things. It's an odd recipe, for sure.

I should have thought to ask the ice cream geek! Thanks for your input. I should be wary of cookbook authors who have so many different types of cookbooks under their belt, but the Ultimate Ice Cream Book is one of my favorites and the authors have authored a number of other Ultimate books. You never know...

I don't think the recipe is good. I think if it had eggs as an ingredient, it might taste more conventional.
