That sounds like my kind of dinner too, and I really like the idea of it being able to freeze so there is always dinner when you're caught short. Book marking this one.

It looks great - a really pretty colour. I like the idea of lack of shrinkage-fear with the gluten free pastry, had never thought of that!

I saw sundried tomato paste in the supermarket today and couldn't remember where I'd seen it used - here! Didn't get it though :-(

We always had bonus jam tarts with leftover pastry!
Tart looks great - love the flavour combinations and that pastry looks like silk
