Elle,
Bramley apples are large cooking apples. They are quite sharp, but not so sharp that it stops me eating the odd slice whenever I'm cutting some up.

Brilliant recipe,which can also be used for green eating apples, if you have a glut. Note: I use a large wide jam making pan, which speeds up the reduction process and also do not put on a lid. You need it to reduce, stirring regularly, and it should take no more than an hour and a half. I also stirred in two tablespoons of dark rum at the end....Yummy!
