At The great Big veg Challenge we often make cakes with vegetables - one way of encouraging veg-phobics to win them over!
Would you fancy joining me in a bloggers challenge to make the most delicious cakes using vegetables?
Let me know!

I love the idea of sweet potato, orange and spice - it sounds like a great combo!

I made a parsnip cake recently (though not blogged yet) and it went down really well at work, but no-one guessed what was in it (well, they tried - leek/potato/courgette/carrot - they aren't very good at guessing ;-)) so veg in cake is great!!!

sounds a delicious combination - look forward to seeing version 2 - I love vegetables in cakes and have collected many of these sorts of recipes so I think I have a sweet potato one in my collection but don't think I have tried it

Hi C

I've had parsnip cake once myself and it was gorgeous but never made one myself, so can't wait to see your recipe!

What an interesting cake - and a lovely autumnal mix of flavours

I just made a sweet potato cake but I have yet to blog about it. It was so moist and delicious. I like your addition of orange and nuts too!

I made sweet potato cupcakes and I think the addition of orange would have made the taste more subtle.
