I made the christmas pudding this weekend and thought the same thing about it being mostly fruit - there is something about it sitting for a few weeks that makes it so soft and gorgeous - wish I had the energy to make a cake too but my mum makes cake and I make pudding. Am looking forward to seeing your cake decorated

Thanks for the links back to your previous Christmas cakes - they are all beautiful. I have chickened out this year and asked my Mum to make the cake. I am, however, determined to make a gingerbread house - love your mini one!
Can't wait to see your decorated cake this year!

Not only does this Christmas cake soudn delicious, but looking back at the last three years' cakes it is clear that you are intrepid,hard working and very talented! Gorgeous cakes all, but I especially love the poinsetta cake. Can't wait to see how you decorate the cake this year.
BTW, why do you need to do the marzipan layer and then the icing layer?

Elle,
You add a marzipan layer before the icing as this not only smoothes out most of the lumps and bumps of the fruit cake behneath giving you a smooth surface to ice on but it also stops the dark fruit colour showing through the icing above. Over a few days the icing would go streaky and slightly brown or sticky if you didn't have the marzipan as a sort of buffer. Plus, it tastes yummy!

Is it weird if I confess that I have never baked nor eaten a christmas cake? It's not something that is eaten here a lot but ofcourse I have known of it's existence for a very long time. It just always seems so incredibly heavy to me, but you make it sound really good. So maybe I should give it a go at some point!
