Well done on the challenge. Your spotted dick pudding looks really delicious. I can't believe they renamed it Spotted Richard or Sultana Sponge. Definitely does not sound right.

hear hear! love all that info on suet and spotted dick - I have never seen vegetarian suet in Australia but would love to find it so I could try this - I love the name - it seems so rich in heritage and reminiscent of days gone by

I think that your decision to add some apples and lemon zest rather than much sugar would have been how our foremothers would have done it - as they would have fruit in the garden for free and sugar would have been more expensive, I assume

Happy Birthday, a bit late Katie! Love your explanation of Spotted Dick and now I have a good recipe for making it, especially with the addition of apples. I found the steamed sweet pudding to be wonderful! Didn't use lashing of custard, but now I know that it's an essential part, so will make some next time.

I've rarely been able to find suet here... and when I have, I haven't known quite what to use it in. It's great that the Daring Bakers are using such a traditional ingredient this month!

I've never eaten a steamed pudding, they never look too good to me, but your photos really make me want to try it. You can tell there are a lot of yummy goodies in there.

do you think about the same amount of butter to replace the suet? it's always more difficult with weights than measure I think... each ingredient weighs in differently... but, maybe butter and suet would be about the same? ...lol....

Well done on this challenge; it looks delicious and... I so agree with you on the naming part!! We have situations like that here in the Netherlands where certain items apparently need to be changed since they are politically incorrect or something ridiculous. Anyway, glad the British decided to stick with 'dick' (ok, I have to admit; the name did make me laugh a little..lol)
