I'm stumped! Our Bramleys wouldn't store long enough to wait ready for the elderflowers and I can't store elderflowers until the autumn - so this is a truly exotic preserve! t.x

Hi Kitschen Pink,
I'm sure it would work with another kind of cooking apple. You want one that turns soft and mushy and has quite a sharp flavour. Failing that, you could always try it with pears.

cooking from hedgerows seems so quaint and brave - would love to taste that jam as I have had elderflower drinks which were great

My hubby used to make elderflower wine, but I haven't seen them around here lately.

I'm so jealous. I would love to pick elderflowers, I love elderflower coridal. But they are not found in Australia, at least not anywhere I have lived. Which is probably a good thing for our ecology, but still!
