Why not just give the name of the guesthouses and associated contact details, instead of just the Fez Riads website which charges a booking fee.

Because the booking fee goes towards the restoration projects in the Medina. And the riad owners prefer not having to deal directly when someone will do it and raise money for a good cause. Simple.
