Introduction	1 in every 133 Americans will be diagnosed with Celiac disease, and I am one of them. Having never heard of Celiacs or gluten-intolerance prior to family members being diagnosed with it I am still amazed any time I meet another Celiac. Over the last few years though I've noticed HUGE growth in awareness, product availability and individuals that are being diagnosed as Celiacs. This blog is being written in an effort to bring together all the information I've been collecting on Celiacs, gluten-free dining & shopping and more specifically, living gluten-free in the St. Paul/Minneapolis metro area.
