Introduction Love food. Eating it, making it, reading about it and talking about it. Having eaten everything from 5-star restaurants to infested roadside stalls in Thailand, here’s my take. Food prepared with heart is better than architectural wonders made for its own sake devoid of soul. Some argue that soul is in the eye of the beholder but I refer to the words of Ferran Adria, "Food MUST convey its DNA." At a posh French joint across Marriot Bangkok, I had carbonised duck shit and rubber chicken with cheap blue cheese. Whilst companions were praising the food, I thought of doing a Seinfeld with the cloth napkins. Memorable indeed! Positively memorable ones were in backalleys having Thai specialties. At a late-night joint in Sukhumvit Soi 22, my mate and I shared food with tiny roaches living at the bottom of the bamboo basket that fell out as we ate. A dog slept next to the charcoal burner for roasting meat and cooked meat was chopped on the same board used for raw meat! At the junction of Rama 4 and Silom, we had the most amazing Fish Maw soup whilst sitting precariously near some of the busiest roads in Bangkok. Who cares. The food was amazing and thats what its all about.
