Introduction My interest in nutrition stems from a 1977 back injury. While hospitalized I decided to casually study nutrition to see if improving the quality of my food intake would help heal my compressed vertebra. After about five years of investigation I concluded that mainstream science, the major health organizations, and government agencies were mistaken about the lipid hypothesis, the supposed connection between saturated fat consumption and clogged arteries. At the same time, the carbohydrate hypothesis was (and still is) being totally ignored. As long as government agencies and advertisers continue to demonize saturated fats and ignore the actual cause of heart disease (mostly excessive consumption of added sugars and omega-6 seed oils) I will labor to influence public health policy and familiarize Americans with the truth about fats and sugars.
