Introduction Eileen: Growing up on a dairy farm in Eastern Pennsylvania was both hard work and a joy. Canning and freezing were seasonal activities. As the years marched on I was given opportunities to cook in Macrobiotic summer camps, a health food store and a health food restaurant. Daily food preparations at home are a joy. This is where I can explore my love of creating health and well-being with delicious local fresh food. Am I ready to share food with the rest of the world? Posi-toot-ly, absolutely! Tina: I grew up in a culinary family. My mother was a gourmet cook from Belgium and the Belgians were the great eaters of Europe. She said most good cooks were inspired by their mothers. She was right. I ran a restaurant called MOM’S from 1976 when my first child was born to 2006 when my last child left for college. I had the good fortune of working at Ballymaloe Cookery School in County Cork, Ireland in 2010. There I learned about slow cooking and organic farming. Since then, a spark has been ignited within me, as if cooking has become another manifestation of myself.
