| Introduction | In 2007 I was diagnosed with Type I Diabetes at the age of 26. A diagnosis that changed my life and lead me to quit my job as a teacher and pursue a much less stressful life as a homemaker. I realized very quickly that living simply and striving for self-sufficiency had a positive effect on my health and the health of my family.
