Introduction Once some of my family began following the gluten-free diet after being diagnosed celiac or gluten intolerant, I slowly started realizing the health symptoms I've had for years were similar to my family members. I thought the symptoms I had were just a way of life, since I had them for so long. But, I finally started following the gluten free diet in September 2010 and have felt so much better. Since then, I've been on a mission to find and create simple, gluten-free recipes that taste as good as gluten! My husband, Mike, and I try to cook from scratch as much as possible by using fresh foods and organic/all natural/simple ingredients. Since following the gf diet, I've been looking for recipes that are either flourless or don't require numerous different blends of gf flour (making it simpler and cheaper). I'm determined to eat a healthy, balanced diet that is as good as gluten! Lauren
