Introduction I have worked as a professional chef for over twenty years, cooking in a variety of establishments and styles—from fine dining to casual cafes—in Australia (my home town), the United Kingdom (Terrence Conran’s Great Eastern Hotel in London, now called Andaz), and the United States (Campagnola and Union in Chicago). I was also fortunate enough to live in Greece, Scotland, and Italy learning from some truly talented home cooks. I have and still do when time, money and family life permit, traveled widely across Europe and Southeast Asia, tasting and learning—experience that is shown in my approach to food. I also lead cooking classes and demonstrations. In December 2008 I moved back to Australia with my family, we are slowly re learning the footsteps I once took as a child growing up here. My greatest cooking challenge at present is preparing healthy, enjoyable and interesting meals for my family- something that is getting easier the older the kids get.
