| Introduction | It’s no secret that the business of food is infested with con artists, apologists and self-serving rhetoric. So how do you deal with it? You could send angry emails to the corporate powers that be (I’ve done this). Or you could savor the creativity, the shamelessness, and the unswerving reliance on the willingness of nearly everyone to assume that they’re being dealt with honestly. I maintain my equilibrium by being a not-completely detached observer of the hucksters and the charlatans, here and there shedding a little light on their antics. And I bake bread in my spare time. |
