Introduction I have always loved to cook. Pancakes were my first fascination, at the age of four. I loved to watch and help out in my mother and grandmother's kitchens. My mother came from a southern cooking tradition. Everyone in her family, except for her, was born and raised in south east Texas in the Big Thicket. They referred to her lovingly as the damn Yankee, since she was born in Oregon. My father came from a second generation restaurant owner, german immigrants, and from a first generation Bohemian Czech mother. Dad grew up in the kitchen restaurant, with his father and grandfather. They served Italian food at the time, and people were known to travel as much as an hour to eat there. As a young adult he was in charge of making the pizzas. He decided to become a mailman instead of sticking to the restaurant business, but Pizza was still sacred in our family.
