Introduction I've been gluten free since December 2008 and prior to that wheat free for several years (I used spelt and kamut). I am not formally diagnosed as celiac, but am intolerate gluten. Since I didn't use white or refined flours previously, I decided that I didn't want to be limited white rice flour and starches. I embarked upon an expedition to find a way of using whole grain, nut and seed flours to maximize the nutrients in the food I was eating. I wanted to be able to adapt my favorite recipes to gluten free as well as learn how to use these new flours to concoct new and delicious creations.
