Introduction | I enjoy the challenge of cooking well. To be a proficient cook one must be a chemist, a philosopher, and an artist. Presenting the food artfully on a plate affords me as a cook the opportunity to indulge my creative side and honestly express myself. While remembering the immortal words of Anton Ego of Rataouille fame..."I don't like food, I love it. If I don't love it, I don't swallow." Cooking is a pleasure, a philosophy, a way of life; not a job or a recipe. LC is passionate about food and cuisine development. I support only sustainable, organic, seasonal foods. All recipes are tested by myself in my kitchen. Recipes are guides, not to be taken as law. With that said, these recipes will, within the constraints of equipment used, be replicable to the practicing home cook. Do not hesitate to ask any question that may arise with any of my recipes.
